Basically, people used to put all leftovers into a container, cover it with mashed potato and bake it.
It is so simple, and it is one of those dishes that can be very good or very bad.
So let’s explore here together what is not good and then create our superfood Shepherd's Pie.
Things to not add: salt, dairy products, animal products.
So the first layer of our pie would be minced beans and lentils, onions, garlic, ginger, parsley, coriander, mint, tofu, cashew nuts, olive oil, mushrooms, tomatoes, eggplant, zucchini, peanut butter, oats, turmeric, curry powder, chilli, sauerkraut, flaxseeds, chia seeds, olives, basil, goji berries, nutritional yeast, carrots, corn.
After all those ingredients are cooked together, pulse them in the food processor, just once or twice very fast. You will create what I call veggie mince.
Sorry but there are no right quantities here. Just go according to your taste, but the bulk of it should be beans.
The second layer will be cooked white potatoes with the skin on, mashed with olive oil, garlic powder, onion powder and nutritional yeast.
Then cook that in the oven for a good one hour!
Done!
